Good stuff to do with balsamic vinegar?
It's a question we keep getting asked and never tire of answering, and here's what I hope is helpful list of tips for using our Spanish reserve wine balsamics...

Sotolongo balsamics have great richness and depth from the ageing in oak, yet retain fluidity even when 30 years old because the original base product is fine sweet wine, and have a rounded and distinctive touch of sharpness because of the acidity - 6 degrees, the perfect acidity for vinegar. (incidentally, the traditional Italian balsamics are made with raisins, which are great if you want that particular syrupy texture and uber-sweetness)

  • FOR SALAD DRESSINGS: mix 1 part vinegar to 2 parts oil.
  • For sweet, sharp and zesty dressings we definitely recommend the 15 year reserve Moscatel with a fruity oil like Castillo de Tabernas picual - lovely with tuna salads (this is the one we feature on the postcards)
  • With dark salad leaves like rocket and spinach the sweet, sharp and spicy 15 year reserve Pedro Ximenez with a more complex oil like the Castillo de Tabernas coupage or IO is delicious.
  • With tomatoes and mozarella or feta the rich, smooth and sweet 30 year reserve Pedro Ximenez is fantastic.

  • FOR SAVORY FOODS: just a splash!
  • Moscatel with chicken, pork and fish and creamy sauces
  • Pedro Ximenez 15 year old with meat and vegetable stir-fries, steaks, chops and tomato-based sauces
  • Pedro Ximenez 30 year old for roasted red meats and game

  • FOR SWEET FOODS: just a dash! 
  • Either of the Pedro Ximenez in fruit puddings crumbles and pies (it will caramelise with the fruit and added brown sugar and continue to imbue with flavour the longer it is left).
  • Marinate berries at room temperature for a yummy forest-fruit salad with the Pedro Ximenez. The 30 year old in particular has a mulled-wine like quality, perfect for this time of year. It can also be a life-saver for any type of fruit salad - The 15 year old lifts blander fruits like pear, strawberry and banana, and will sweeten and mellow out sharp apples and sour grapes.
